Orecchiette in Italian means “small ears”, however Italian orecchiette pasta do not have much in common with ears besides the name of course. Main characterization of orechhiette is that they are thinner in the center and thicker outside.

This pasta type is very popular in Puglia in southern Italy. Bothpasta and read are a very important element of local cuisine. Interestingly, orecchiette, widely available in Italy are becoming more and more popular abroad.
